Our Philosophy: If you have great equipment and great ingredients, with a little practice you can cook any dish in the world. We review pots and pans, deep fryers, knives, grain mills, and anything else you might find in a high-end fancy kitchen. We obsess a little over how to season carbon steel, tell a few jokes, and occasionally cook something delicious. We really like brands like De Buyer, Matfer, Lodge, Mauviel, Kramer Knives, Zwilling, Staub, and others. And we live by the motto: you can never have too much great kitchen gear.
Additionally, Uncle Scott has a little corollary to the Golden Rule, which he calls the Carbon Steel Rule: Never recommend that someone else buy a frying pan if you wouldn't buy it yourself. As such, he buys all of the products he reviews with his own money, no free review copies are accepted. This keeps product reviews as genuine as possible and also means that Uncle Scott is out there hunting for bargains on great gear just like you are.

Looks delicious and perfectly cooked!
The best line from All Clad and probably the best stainless steel cookware in the D7 series that was discontinued in 2018. If you’re lucky enough to acquired them, you know what I’m taking about. Only one I need to complete that line is the unicorn 3.5 qt Dutch oven. Best line of pans ever made
Great review! Just bought one of these
I bought a (probably) cheaper in price and, therefore cheaper in quality, pan. The pan came with what felt like pre-coating. The instructions did not say to wash the pan first. Here are the seasoning instructions: oil the inside of the pan (amount not specified). Place on medium high heat for 4 minutes. Remove from heat. Let pan completely cool. Repeat 2 times. Needless to say, whatever was in that sticky pre-coating is now stuck to pan. Also, pan never got any darker. Glad I found your channel.
I think you mean shrinkflation, hyperinflation is when the wheelbarrows come out. If I do ever visit the US yellow stone is on my list for sure, just to try those beans :p
Le creuset all the way! Staub might be as good as in terms of performance but the design is soooooo ugly i never felt the apeal to try it out.

I think in that video I used Dawn... you want one that cuts grease, but be careful that you don't get one that has peroxide or bleach. Regular usually works fine.

The eggs are over cooked. Basically burned them.
Spanish “omelets” are potato’s/ onions/ eggs. And those are perfectly browned. Some folks even like their regular omelets with some color too. Adds a different flavor. 💁🏻♀️

The vegan bashing is getting quite old. Is it that you don't understand it, or don't agree with it? I enjoy this channel because your reviews are genuinely insightful, but the negativity for vegans and vegetarians (of which I'm neither) makes me want to switch channels.

Debuyer? Or different one? I'm so glad you talked me into a debuyer. I absolutely love it. I want to get a smaller one. Haven't touched my carbon steel one yet. They are too difficult to season for me.
(I don’t usually cook with gas but I have a small portable one burner gas cooker).
@UncleScottsKitchen Have you ever mentioned cooking with Olive oil? In the video "How to season and care for Carbon Steel and Cast Iron Cookware" by "Cook Culture", one of his key tips is to never use Olive oil - not for seasoning, but also not for cooking. I could see it being applicable if you're dealing with especially high temperatures where the oil is more likely to go partway seasoning (and be all sticky), but at typical cooking temperatures, on a properly seasoned pan, I would assume it would be okay.
Should you also put oil on the handle and the bottom parts of the pan? For either protection of the heat/flames and/or oxidacation? Other videos also shows that you can do this seasoning in the oven, but this specific pan has in the manuals that only max 10 min at maxx 220 degrees.
I'm an omnivore. However I don't feel threatened by those who wish to restrict their own consumption of meat while seeking options which attempt to mimic the savory taste of meat. And I can't blame manufacturers for trying to describe their products using terms which give consumers some idea of the flavor profiles they can expect. But, hey, if ridiculing them boosts your ego, don't let me stop you. Amuse yourself.
If Matfers were said to leech too much iron, chromium and arsenic, would you be kind enough to display your vast scientific knowledge and tell us just how much iron, chromium and arsenic are acceptable? Don’t cook acidic food in cast iron. Okay. Sear a steak in carbon steel and you will destroy your seasoning. Any thing else? Or is carbon steel, as I contend, a parlor trick to get slider eggs if you are manic about maintaining your seasoning. Or you could float everything in a pool of fat, in which case stainless works just as well. Paella yes or not - MAYBE. And how have you and the Cook Culture joker managed to bypass all the scientific studies on non-stick? And why don’t you read my comments? I really need my 15 minutes of fame…
I don't pretend to be a scientist or know the exact levels that are harmful or not, so I have to trust that the French national government and EU regulations are adequate. We need more info on the local provincial regulation that triggered the recall... seems stricter than the others. It's like California Prop 65 warnings... they never tell you how bad the product is. Bad enough for a warning label but not bad enough to ban it, I suppose. I got a new Ooni pizza oven and it has a Prop 65 warning on it. Should I use it or not? Who knows.
@@UncleScottsKitchen but somehow you know that the extensively tested current non-sticks are dangerous. You and that Cook Culture joker are a tag team. And HexClad is the only cookware that has met its claims and exceeded my expectations. He is slandering them out of nowhere.
Interesting how you have the darkened oil on the inner side of the pan, above where the level of the oil was. It looks like an especially thick layer of seasoning; it got sufficient heat before the pool of oil in the bottom was hot enough to smoke. Presumably due to the position above the burner. If you wanted all of the pan to be consistent and not have that thicker part, using a different approach - heating the pan (but not hot enough to make seasoning), then rubbing a thin layer all over, then 'wiping off' with another paper towel, and /then/ applying enough heat to season - that should produce an even color throughout the whole pan. (And I'd do the outside as well; you don't mention that step with your initial seasoning)

I've got a 12" mineral B. I did the initial seasoning in the oven. The little yellow bee came out of the handle, and it doesn't look as pretty, but it still works great! I guess I somewhat melted or burned off the coating, but the pan is still great.

I perform tests on metals for several metal manufacturers used for kitchenware. The testing method used is standard. Other carbon steel pans pass this tested. Matfers did not. These pans are arsenic.
What kind of tests? Which brands? Have you tested a Matfer?
Breaking News!!! A local California government has issued a recall on all passenger motor vehicles. After extensive testing they've determined them to inadequately protect passengers from impact risks. They drove no less than ONE HUNDRED different car models/brands off of the sheer face of El Capitan cliff in Yosemite. Every single make and model was reduced to a pancake. Consequently, no motor vehicle meets this new standard, thus, in the interest of public safety, they have issued a recall order on all motor vehicles in the country. Edit: In unrelated news, I never stopped using my Matfer pans. Idiots will idiot.

The seasoning on the typical carbon steel paella pan is pretty thin and inconsistent. You’re constantly craping the surface to get soccarat off along with the seasoning. The advice from most of the paella manufacturers is to oil and rap the pan in wax paper as it will still rust. If someone is really concerned about impurities you can always use an enameled paella pan.

I have a Staub Universal Pan. I thought the description “enameled” only referenced the outside of the pan. 🤦🏻♀️🤦🏻♀️ I’ve been seasoning it like my cast iron skillet. 😑
